We enjoyed two programs about herbs from Jessica Stombaugh, Program Manager from the Regional Environmental Education Center.

The Window Box Herb program informed the students about the uses and history of herbs. They also got to plant an herb (parlsey, cilantro, chives, oregano ) for their home.
Part 2 of this program involved the children in making homemade salso with herbs and fresh vegetables. They then tasted the salsa and compared it to store bought salsa.  Everyone agreed that the homemade salsa was tastier. This salsa has no additives or salt.

                                                                  
                                                                          Jessica's Salsa
1 green bell pepper
1 red bell pepper
1/2 poblano pepper
1/4 cup cilantro
4 Roma tomatoes
1 can black beans (drained)
1 sm. can corn (drained)
1/2 lime squeezed over
